Menu Monday: Santa Fe Crockpot Recipe

So, honestly, I do not have time to watch a new movie once a week, unless its the weekend. So, I'm changing Monday's to "Menu Monday". I will post a recipe that I am making for dinner that night.
Tonight's dinner is Santa Fe Crockpot Recipe. It is a Weight Watcher Recipe since my mother-in-law is on Weight Watcher's. We have NEVER tried this recipe, so I will have to update this post after dinner tonight to let you know what I thought of it and maybe some pictures of the food. Here is the recipe:

Slow cooked shredded chicken with corn, tomatoes and black beans. Prepare the night before and turn your crock pot on in the morning for an easy weeknight meal. Low fat and low in points. Serve over rice with chopped scallions, fresh cilantro, fat free sour cream and reduced fat cheddar.

Crock Pot Santa Fe Chicken
Gina's Weight Watcher Recipes
Servings: 8 servings
Size: 1 cup • Old Points: 3 pts Points+: 4 pts
Calories: 190 • Fat: 1.5 g • Fiber: 5.6 g • Carbs: 23.1 g • Protein: 21 g
·         24 oz (1 1/2) lbs chicken breast
·         14.4 oz can diced tomatoes with mild green chilies
·         15 oz can black beans
·         8 oz frozen corn
·         1/4 cup chopped fresh cilantro
·         14.4 oz can fat free chicken broth
·         3 scallions, chopped
·         1 tsp garlic powder
·         1 tsp onion powder
·         1 tsp cumin
·         1 tsp cayenne pepper (to taste)

·         salt to taste
Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot . Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice (extra pts).


Update: This meal is delicious! We served it over rice for dinner, and it makes a GREAT meal! I'm having leftovers for lunch and eating it with tortilla chips, which also tastes great! If you like spicy, you will like this meal!

A Dream for the Future

I guess a dream I have for the future is to have 6 kids in our family. We want to have about 3 of our own and adopt the other 3. My husband and I LOVE kids! He wants 7, I want 6. He jokes that our last time being pregnant will be with twins, LOL! We shall see...that is one of my dreams for the future.

I can't think of anything else...I really haven't thought that much about the coming year. Yea...

30 DBJ: Day Twenty-seven

My Worst Habit

Probably biting my finger nails is my WORST habit. I find it easier to just bite them off then grab some nail clippers to do it.
I love to get manicures and pedicures when we have some extra money. It feels good to get it done, and I usually feel prettier when it's finished. Now with the weather being cold, there is not much need for a pedicure, since I don't need to wear my flip flops out. But, sometimes I'm too lazy to put my socks and shoes on, so I will wear my flip flops outside.

30 DBJ: Day Twenty-six

Something I"m looking forward to this year

Our family vacation! Last year, our family went to Round Top, TX for a weekend vacation and we stayed in this really nice house in the country.
This year, our family is traveling to Arkansas! And the best part...it's my birthday weekend! :) I'm SUPER excited about the scenary and white water rafting! I've been white water rafting in Colorado before, and had alot of fun! Some other things we can do include hiking, horseback riding and visiting the local towns.
We will also play games, like charades, taboo, trivia and much more!

Crying It Out

I'm NOT a fan of crying it out. But, I really want him to learn to put himself to sleep, instead of letting me do it for him. It's so hard sitting here listening to him cry and be SO mad! I'm going in there in 10 minute intervals to let him know I'm still here and everything is okay. I started at 9:47 am this morning, because he kept falling asleep on me, so I knew he was tired. Went and talked to him at 9:57 am came back at 9:59 am went and talked to him at 10:09 am came back at 10:12 am, and here I am again sitting and waiting and wishing and hoping (hey that's a Jack Johnson song, LOL!) that he will fall asleep. It's interesting because he will get quiet, and when he's quiet I just hold my breath and think, "Is this it? Is he asleep?" (fingers crossed), but then he starts crying again! It breaks my heart  </3
10:17 am: It's still quiet in there...hmmmm? Don't want to open the door b/c I'm afraid I will wake him up, but kind of curious if he is asleep...I will wait til 10:22 am to go check, but I MUST be a ninja when I go check...10:25 am: HE'S ASLEEP!!!!!!!!!!!!!!!!! (happy dance)

DBJ: Day Twenty-five

Your Day in Great Detail

My day goes a little something like this:

7 am nurse little man
7:15 am little man falls back to sleep sometimes
7:30 am play with little man
9 am acts tired
9:30 am try to put him down for nap
10 am if he's not napping feed him oatmeal
11 am jumper time for little man, make my lunch
12 pm do dishes
12:30 pm watch something on TV
1 pm feed little man his lunch (oatmeal with veggie)
2 pm if little man is acting tired try to put him down for nap #2
3 pm do some chore (laundry, pick up living room)
4 pm husband comes home and takes over little man after I nurse him
5 pm get dinner started (unless its a crock pot meal then I will start it earlier)
6:30 pm ish eat dinner
7 pm feed little man his dinner (oatmeal with veggie)
8 pm get little man ready for bed (bath, vitamins & brush gums)
9 pm try and put little man in bed to sleep for night
10:30 pm my husband and I try to go to bed

And since this is pretty much what I do every day, instead of doing my week in great detail tomorrow, I'm going to change it to:

30 DBJ: Day Twenty-four

Where I Live

TEXAS

The GREATEST state in the USA! I was born and raised here, so I've known nothing else. The first time I traveled outside of Texas was when I was 11, I think. We went to Florida to visit my 2nd oldest brother, Mark, who was living there going to flight school. I remember falling in the Gulf because I was staring at my feet in the sand with the water rushing around it, and I guess it kind of made me dizzy and I fell! LOL! 
The craziest thing about Texas is you can travel for hours and hours and never leave the state!
I grew up in a small town called Wimberely. It used to be a one stoplight town, but that has changed.
I went to college in Nacogdoches, TX (Stephen F. Austin State University; Axe 'Em Jacks!) It is a very beautiful small town, and I felt like a person there, not a number.
Now I live in Round Rock, TX where there is literally a "round rock" for which the town was named after. Weird? I love Round Rock because I have family here, and its close enough to Austin to go party! Oh, wait I don't party...but I do like to go to some of the live music shows they have downtown.

30 DBJ: Day Twenty-Two

A Website


I LOVE Baby Center! It's a parenting website. You can join different groups on the website, and those groups have their own discussion board. One of the groups I am a member of is the July 2010 Birth Club. Everyone in that group had a baby sometime in July 2010. So you can ask each other's advice and discuss your little one's developmental milestones.

Sometimes there is drama on these boards, but I don't deal with the drama. I'm more of a lurker on the site. I like to read other people's posts, and see their cute pictures. Every once in awhile I will seek advice, which I take with a grain of salt.

Another fun thing I like is they send you a weekly email about what your little one should be accomplishing this week. For example, this week, my little one will love turn-taking games, especially ones that involve sounds and language. Of course they also remind you that your little one is an individual, and that every baby develops at a different pace.

I will continue the 30 DBJ where I left off. Hope everyone is having a good new year so far! My little man is 6 months old now!!! Holy the COW! Where is the time going? See you tomorrow!

30 DBJ: Day Twenty One

A recipe

These are a hit in the Burns' home:

Simply Sour Cream Chicken Enchiladas

Ingredients:

Servings:  8

1 lb chicken breast, diced
1 medium onion, chopped
1 tablespoon vegetable oil
8 8-inch flour tortillas, softened
1 1/2 cups grated monterey jack cheese or Mexican blend cheese, divided
   1/4 cup butter
1/4 cup flour
1 (15 oz) can chickem broth 
1 cup sour cream
1 (4 oz) can chopped green chilies

Directions:

Prep Time: 25 mins
Total Time: 45 mins

1. In frypan, cook chicken and onion together in oil over medium-high heat until chicken is just done.
2. Divide cooked chicken evenly between 8 tortillas; add 1 1/2 tablespoons cheese to each tortilla.
3. Roll enchiladas and place seam-side down in 9X13" baking dish that has been lightly sprayed with no-stick cooking spray.
4. Melt butter in a medium saucepan; stir in flour to make a roux; stir and cook until bubbly; gradually whisk in chicken broth then bring to boiling. stirring frequently.
5. Remove from heat; stir in sour cream and green chiles; pour sauce evenly over enchiladas.
6. Top with remaining 3/4 cup cheese (baking dish may be double-wrapped and frozen at this point) and bake at 400 degrees for 20 minutes until cheese is melted and sauce near edges of baking dish is bubbly.

When I make this, I use HEB's fully cooked shredded chicken. It saves some time and tastes GREAT!
