Menu Monday: Santa Fe Crockpot Recipe

So, honestly, I do not have time to watch a new movie once a week, unless its the weekend. So, I'm changing Monday's to "Menu Monday". I will post a recipe that I am making for dinner that night.
Tonight's dinner is Santa Fe Crockpot Recipe. It is a Weight Watcher Recipe since my mother-in-law is on Weight Watcher's. We have NEVER tried this recipe, so I will have to update this post after dinner tonight to let you know what I thought of it and maybe some pictures of the food. Here is the recipe:

Slow cooked shredded chicken with corn, tomatoes and black beans. Prepare the night before and turn your crock pot on in the morning for an easy weeknight meal. Low fat and low in points. Serve over rice with chopped scallions, fresh cilantro, fat free sour cream and reduced fat cheddar.

Crock Pot Santa Fe Chicken

Servings: 8 servings
Size: 1 cup • Old Points: 3 pts Points+: 4 pts
Calories: 190 • Fat: 1.5 g • Fiber: 5.6 g • Carbs: 23.1 g • Protein: 21 g
·         24 oz (1 1/2) lbs chicken breast
·         14.4 oz can diced tomatoes with mild green chilies
·         15 oz can black beans
·         8 oz frozen corn
·         1/4 cup chopped fresh cilantro
·         14.4 oz can fat free chicken broth
·         3 scallions, chopped
·         1 tsp garlic powder
·         1 tsp onion powder
·         1 tsp cumin
·         1 tsp cayenne pepper (to taste)

·         salt to taste
Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot . Season chicken breast with salt and lay on top. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning. Serve over rice (extra pts).


Update: This meal is delicious! We served it over rice for dinner, and it makes a GREAT meal! I'm having leftovers for lunch and eating it with tortilla chips, which also tastes great! If you like spicy, you will like this meal!

A Dream for the Future

I guess a dream I have for the future is to have 6 kids in our family. We want to have about 3 of our own and adopt the other 3. My husband and I LOVE kids! He wants 7, I want 6. He jokes that our last time being pregnant will be with twins, LOL! We shall see...that is one of my dreams for the future.

Hopes: I hope my little man continues to grow well developmentally, physically, socially and emotionally
I hope to go deeper in my walk with God
I hope to be in better shape (I know I'm skinny, but I am NOT in shape)
I hope to write more songs and stories
I hope to learn how to run the coffee shop

Dreams: To submit my children's story to a publishing company
To play the piano better

Plans: Go to Arkansas in April :)
Celebrate J-man's 1st birthday

I can't think of anything else...I really haven't thought that much about the coming year. Yea...

30 DBJ: Day Twenty-seven

My Worst Habit

Probably biting my finger nails is my WORST habit. I find it easier to just bite them off then grab some nail clippers to do it.
I love to get manicures and pedicures when we have some extra money. It feels good to get it done, and I usually feel prettier when it's finished. Now with the weather being cold, there is not much need for a pedicure, since I don't need to wear my flip flops out. But, sometimes I'm too lazy to put my socks and shoes on, so I will wear my flip flops outside.

30 DBJ: Day Twenty-six

Something I"m looking forward to this year

Our family vacation! Last year, our family went to Round Top, TX for a weekend vacation and we stayed in this really nice house in the country.
This year, our family is traveling to Arkansas! And the best part...it's my birthday weekend! :) I'm SUPER excited about the scenary and white water rafting! I've been white water rafting in Colorado before, and had alot of fun! Some other things we can do include hiking, horseback riding and visiting the local towns.
We will also play games, like charades, taboo, trivia and much more!
